Cuban Mojo Chicken & Zucchini
This recipe features a well-structured workflow and excellently formats divided ingredients using bulleted lists. However, it severely underseasons both the vegetables and the chicken, resulting in a low score until the salt quantities are corrected.
Score: 6/10
Suggested fixes
- Increase the total kosher salt to at least 2 teaspoons in the ingredient list.
- Allocate 1 teaspoon of kosher salt to the vegetable prep in Step 4 to reach a proper 1% salinity.
- Increase the salt in the mojo marinade to 1 teaspoon, or instruct the user to season the chicken directly with 1/2 to 3/4 teaspoon of salt before adding it to the marinade to ensure the seasoning sticks to the meat.
- Change the onion preparation to wedges with the root end kept intact, or instruct the user to skewer the onion rounds so they do not separate during tossing and grilling.
Issues
- high / flavor: The recipe calls for only 1/4 teaspoon of kosher salt for 1.5 lbs (680g) of vegetables. This yields a salinity of roughly 0.2%, far below the 1% starting point for vegetables, leaving them drastically underseasoned.
- medium / flavor: The 1 lb of chicken receives only 3/4 teaspoon of salt mixed into a liquid marinade. Because the chicken only marinates for 15 minutes and the excess marinade is discarded, much of the salt will go down the drain. The meat itself will end up underseasoned compared to the 1.25% target for boneless chicken.
- medium / cookability: Step 4 instructs the cook to cut the onion into 1/2-inch thick rounds and toss them in a bowl, advising to 'toss gently so the onion rounds remain intact.' Tossing rounds in a bowl is very likely to separate the rings, which will then easily fall through the grill grates in Step 5.
Strengths
- Perfect formatting of bulleted lists, including blank lines before and after.
- Excellent ingredient tracking, with divided amounts of olive oil, salt, and pepper clearly specified where they are used.
- Smart time management, using the 15-minute marinating time to prepare the vegetables.
- Plausible total time, cost, and calorie estimates.
