This is a very strong, well-formulated recipe. The flavors are classic and balanced, preparation steps occur logically before active cooking, and ingredient quantities are meticulously tracked across every step. The only notable issue is the transition between cooking the breadcrumbs and searing the fish, which requires wiping the pan to prevent burning.

Suggested fixes

  • Add an instruction at the end of Step 2 or beginning of Step 4 to wipe the skillet clean with a paper towel before heating the oil for the swordfish.
  • Consider searing the swordfish to just under done (about 135°F) since it will continue to cook as it rests and when it is tossed with the hot pasta and sauce in Step 6.

Issues

  • medium / cookability: In Step 4, the skillet is used to sear the swordfish immediately after making the breadcrumb topping in Step 2. Without an instruction to wipe the skillet clean, residual breadcrumbs left in the pan will burn over medium-high heat while the fish sears, leaving a bitter flavor.
