Saffron Crab & Corn Rice
This is an appealing, paella-inspired summer rice dish with excellent stovetop technique. However, it requires a major flavor adjustment: the rice will be severely underseasoned because only 1 teaspoon of salt is used for a large volume of unsalted broth, rice, and vegetables, and a formatting rule for bulleted lists is violated.

Suggested fixes
- Increase the total kosher salt to at least 2 to 2 1/2 teaspoons (adding the extra amount to the tomato and rice mixture in step 5) to properly season the unsalted broth and grains.
- Remove or revise the health claim, as the crab's saltiness will not adequately season the rice without additional salt or a salted broth.
- Convert the bulleted list in Step 5 into an inline sentence: 'Add the prepared garlic, 1 teaspoon smoked paprika, and 1/4 teaspoon crushed red pepper flakes.'
- Increase properties.total_minutes to 65 to account for the tedious crab-picking process.
Issues
- high / flavor: The recipe uses only 1 teaspoon of kosher salt for over 1.3 kilograms of unsalted components (3/4 cup rice, 2 cups unsalted broth, and over 1.5 lbs of vegetables). The health note assumes the crab will season the rice, but since the crab is only scattered on top at the end, its sodium will not penetrate the rice, leaving the main bulk of the dish incredibly bland.
- low / clarity: Step 5 uses a bulleted list for only two ingredients (smoked paprika and crushed red pepper flakes). Bulleted lists should be reserved for preparations or mixtures of more than three ingredients.
- low / timing: Picking 2 pounds of whole crab and carefully checking for shells will easily take a home cook 15-20 minutes on its own, making the 55-minute total time very tight when combined with the other vegetable prep and 38.5 minutes of active cooking and resting.
