Greek Pork Chops with Roasted Heirloom Tomatoes

An easy, appealing sheet pan meal with accurate timing and well-structured prep steps. However, the recipe requires a major revision to its salt quantities, as the meat and vegetables are substantially underseasoned and the tomatoes receive no salt at all.

Suggested fixes

  • Increase total kosher salt to at least 2 1/4 teaspoons in the ingredient list.
  • In Step 2, increase the salt tossed with the potatoes to 3/4 teaspoon.
  • In Step 3, increase the salt applied to the pork chops to 1 teaspoon.
  • In Step 4, add 1/2 teaspoon kosher salt to the tomatoes.
  • In Step 6, simply instruct the cook to 'divide the lemon wedges between the plates' (and if only half a lemon is needed, change the ingredient list to 1/2 lemon).

Issues

  • high / flavor: The recipe is severely underseasoned. At 1.25% by weight, 12 oz of pork needs roughly 4.25g of salt (about 1 to 1.25 tsp Kosher salt), but only gets 1/2 tsp. At 1% by weight, the 12 oz of potatoes need roughly 3.4g of salt (about 3/4 to 1 tsp), but only get 1/4 tsp. The 12 oz of tomatoes receive no salt at all. The 1.5 oz of feta at the end does not compensate for underseasoning the main components during cooking.
  • low / clarity: Step 1 instructs the user to 'cut 1 lemon into wedges', but Step 6 says to finish with 'lemon wedges cut from half of the 1 lemon'. This leaves the fate of the other half unclear.
