While the mussels will release some salty liquor and the Worcestershire sauce adds a small amount of sodium, sweating over a pound of tomatoes and vegetables along with 1 1/4 cups of low-sodium wine and stock requires a baseline seasoning of salt to build flavor and balance the acidity of the tomatoes and wine.
  • low / clarity: In Step 2, the instruction '1 lemon, yielding 1 tablespoon juice with the rest cut into wedges' is slightly confusing, as a standard lemon yields 2 to 3 tablespoons of juice. It would be clearer to instruct the cook to juice half the lemon to get 1 tablespoon, and cut the other half into wedges.
