Peruvian-Style Cilantro Pork

A structurally excellent and highly cookable sheet pan recipe that accurately stages vegetable additions to prevent mushiness. However, it requires a significant increase in salt to properly season the pork and vegetables according to weight-based guidelines.

Score: 7/10

Suggested fixes

  • Increase the kosher salt in the pork seasoning (Step 2) to 1 1/4 teaspoons to meet the 1.25% by weight guideline.
  • Increase the kosher salt for the potatoes (Step 3) to 3/4 teaspoon, and for the zucchini (Step 5) to 1 teaspoon.
  • Update the total kosher salt in the ingredient list from 2 1/2 teaspoons to 3 1/2 teaspoons to reflect these increases.
  • In Steps 4 and 5, specify tossing the vegetables in a medium bowl before transferring them to the sheet pan.

Issues

  • high / flavor: The 1 pound pork tenderloin is seasoned with only 3/4 teaspoon of kosher salt. According to the 1.25% salt by weight guideline for boneless meat, 1 pound (453g) requires approximately 5.6g of salt, which is roughly 1 1/4 to 1 1/2 teaspoons (depending on brand). The current amount will leave the main protein substantially underseasoned.
  • medium / flavor: The vegetables fall slightly short of the 1% by weight salt guideline. One pound of zucchini requires about 4.5g of salt (closer to 1 or 1 1/4 teaspoons, rather than 3/4 teaspoon), and 12 ounces of potatoes should have around 3/4 teaspoon rather than 1/2 teaspoon.
  • low / clarity: In Steps 4 and 5, the instructions say to 'toss the prepared bell pepper' and 'toss the prepared zucchini' with oil and spices, but do not specify doing this in a bowl. A cook might attempt to toss them directly on the hot, crowded sheet pan.

Strengths

  • Perfectly formatted bulleted lists for complex mixtures with correct spacing.
  • Smart staging of ingredients on the sheet pan, giving potatoes 30+ minutes while limiting zucchini to 10-14 minutes so it doesn't overcook.
  • Excellent overlap of tasks, using the roasting time to make the sauce and rest the meat.
  • Ingredient amounts are clearly restated at the exact moment of use, with concise references to prepared components later.
