An elegant, structurally sound dish that suffers from severe underseasoning and unrealistic multitasking instructions for picking the whole crab.

Suggested fixes
- Add a dedicated prep step at the beginning of the recipe to pick the crab meat, chop the vegetables, and prepare the spice mix before turning on the heat.
- Increase the total Diamond Crystal kosher salt to at least 2 1/2 teaspoons: use 1 teaspoon for the peppers, 1/2 teaspoon for the rice, and 1 teaspoon for the aromatics and filling.
Issues
- high / flavor: The recipe is substantially underseasoned. One teaspoon of Diamond Crystal kosher salt (about 2.8g) is far too little for roughly 1 kilogram of combined peppers, rice, aromatics, and crab. Even accounting for the natural brine of the crab, this volume requires significantly more of this low-density salt.
- medium / timing: Picking 8 ounces of meat from a whole Dungeness crab is a time-consuming and messy task. Instructing the cook to do this while managing the rice and aromatics is unrealistic and will likely ruin the workflow.
