Polish Pork Patties with Sweet-Sour Cabbage

A flavorful and appealing combination of Polish-inspired ingredients, but the recipe suffers from severe under-seasoning across all components and a single-skillet cooking sequence that will leave the potatoes and pork cold by the time the cabbage finishes.

Score: 6/10

Suggested fixes

  • Increase the total kosher salt to 1 3/4 teaspoons. Use 3/4 teaspoon in the pork patty mixture, 1/2 teaspoon for the potatoes, and 1/2 teaspoon for the cabbage.
  • Change the cooking workflow to use two skillets simultaneously (one for the cabbage, one for the potatoes and pork) or roast the potatoes in a 425°F oven while cooking the pork and cabbage on the stovetop to ensure all components are served hot.

Issues

  • high / flavor: The recipe is significantly under-seasoned. Based on standard ratios (1.25% for meat, 1% for vegetables), 12 oz of pork requires about 3/4 teaspoon kosher salt. The 10 oz of potatoes and 16 oz of cabbage/onions each need about 1/2 teaspoon kosher salt. The current total of 1 teaspoon salt for over 2 pounds of food is inadequate.
  • medium / timing: Cooking all three components sequentially in a single skillet takes too long. The potatoes will rest for roughly 23 minutes while the pork and cabbage cook, becoming cold and losing their crispness. The pork will also sit for nearly 14 minutes, making it lukewarm upon serving.

Strengths

  • Clear, well-structured instructions with prep grouped at the beginning
  • Proper formatting of bulleted lists for mixtures with more than three ingredients
  • Accurate accounting of ingredient amounts between the ingredients list and instructions
  • Total time estimate accurately reflects the sequential steps
