Chef critique
Sambal Shrimp & Zucchini
A highly appealing and well-structured stir-fry recipe. The flavor balance is excellent and the technique of cooking the zucchini separately ensures a great texture. Minor adjustments to the rice cooking ratio and explicitly including aromatic prep in the first step would make it perfect.
Score: 9/10
Suggested fixes
- Add 'mince the garlic and grate the ginger' to the prep instructions in Step 1.
- Reduce the water for the rice to 1 scant cup to prevent it from becoming mushy.
Issues
- low / clarity: Step 1 misses the preparation instructions for mincing the garlic and grating the ginger, which are instead assumed in Step 2.
- low / cookability: The water-to-rice ratio (1 1/4 cups water to 3/4 cup jasmine rice) is slightly high and may result in overly soft or mushy rice. A ratio closer to 1:1.25 (about 1 scant cup water) is standard for jasmine rice.
Strengths
- Proper stir-fry staging by cooking zucchini first, then removing it to prevent overcooking.
- Well-balanced sauce utilizing sweet, salty, sour, and spicy elements.
- Efficient use of time by having the rice cook concurrently with the stir-fry.
