Lao Chicken Larb Lettuce Cups

This authentic-feeling chicken larb uses great technique (water-poaching minced chicken and making toasted-rice powder), though both the chicken and pickled carrots are under-salted and prep should be better front-loaded before active stovetop cooking.

Score: 7/10

Suggested fixes

  • Add 3/4 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon Morton kosher salt), divided: toss 1/2 teaspoon Diamond Crystal kosher salt into the quick-pickled carrots in Step 2, and add 1/4 teaspoon Diamond Crystal kosher salt along with the 1 teaspoon fish sauce when pre-seasoning the minced chicken in Step 5 (or increase the total fish sauce in the recipe to 1 1/2 tablespoons and add salt to the carrots).
  • Begin Step 1 by juicing the 2 medium limes to yield 3 tablespoons juice, prepping the pickled carrots so they can marinate early, and washing the lettuce and tearing the mint before turning on the stove to toast the rice.
  • Move the mint prep out of Step 4's dressing assembly into the initial prep step so each step covers one coherent task.

Issues

  • medium / flavor: Both components are significantly under-seasoned. For 12 ounces (340 g) of boneless chicken, the 1.25% salt target is ~4.25 g salt, plus 8 ounces (227 g) of carrots at 1% needs ~2.25 g salt. One tablespoon of fish sauce across the whole dish supplies only about 3.5 to 4 g of salt Equivalent total, leaving the chicken slightly under-seasoned (1 tsp fish sauce in Step 5 is only ~1.2 g salt) and the pickled carrots completely unseasoned.
  • low / clarity: Step 1 starts with active stovetop cooking (toasting the rice) before any vegetable or meat prep is done, and Step 4 combines building the dressing with an unrelated prep task (tearing and setting aside the mint leaves).
  • low / clarity: Step 2 and Step 4 call for divided amounts of lime juice, but the instruction prose never states the action of juicing the 2 medium limes first.

Strengths

  • Water-poaching the hand-minced chicken breast is an authentic technique that keeps lean chicken breast tender and juicy.
  • Making fresh toasted-rice powder (khao khua) delivers essential Lao texture and nutty aroma.
  • Ingredient amounts across the steps match the ingredient list accurately, and the bullet list in Step 4 is properly formatted.
