Adobo Chicken & Cabbage Bowls

A well-structured, flavorful weeknight adobo bowl, but the combined quantities of salt and soy sauce will result in a severely over-salted dish.

Score: 7/10

Suggested fixes

  • Reduce the salt applied to the chicken in Step 2 to 1/2 teaspoon (and adjust the total salt in the ingredient list to 3/4 teaspoon) to properly balance the high sodium content of the soy sauce.
  • In Step 7, remove the instruction to temp the chicken with a thermometer, replacing it with a note that the bite-sized pieces should be cooked through and tender after the simmer.

Issues

  • high / flavor: Seasoning 1 pound of chicken with 2 teaspoons of salt and then braising it in 3 tablespoons of soy sauce will make the final dish overwhelmingly salty, as the bite-sized pieces will heavily absorb the soy broth.
  • low / cookability: Step 7 instructs the cook to check that the chicken reaches 175°F, but temping bite-sized pieces of chicken in a stew is difficult and impractical. With over 20 minutes of total simmering time, the chicken will easily be fully cooked; a texture check is more appropriate.

Strengths

  • Smart workflow that groups all vegetable prep at the beginning and utilizes the chicken's resting time to start the rice.
  • Concise, well-written instructions that successfully build flavor by searing the chicken before blooming aromatics and deglazing.
  • Excellent concise references to 'prepared onion' and 'prepared cabbage' in later steps without needlessly restating their amounts.
