A flavorful and appealing Korean-inspired weeknight stir-fry, but it suffers from a lack of adequate presalting on the chicken and an impractical instruction to take the temperature of bite-sized meat strips.

Suggested fixes
- Increase the kosher salt used on the chicken in step 4 to 3/4 or 1 teaspoon, keeping in mind the salinity differences between brands.
- Change the doneness indicator in step 6 from reaching 165°F to visual cues, such as 'cooked through and no longer pink inside'.
- Consider changing the chicken ingredient to boneless, skinless thighs (reducing the purchased amount to roughly 1 pound) to streamline the prep and match the 'fast' description.

- high / flavor: The 1/4 teaspoon of kosher salt is inadequate for presalting the chicken. 1.5 lbs of bone-in, skin-on chicken thighs will yield about 0.8 to 0.9 lbs (360-400g) of meat. At the recommended 1.25% salinity by weight, this requires about 4.5g to 5g of salt (closer to 1 teaspoon of kosher salt, depending on brand). The salty sauce added later will not correct the underseasoned interior of the chicken pieces.
