Broiled Dungeness Crab with Summer Corn Succotash
A well-structured and highly appealing seasonal recipe. The prep work is cleanly separated from active cooking, and the instructions for cleaning and broiling the whole crab are very clear. However, the vegetable mixture is significantly underseasoned based on its total weight.
Score: 8/10
Suggested fixes
- Increase the kosher salt to 1 teaspoon in both the ingredient list and Step 5 to properly season the succotash.
- In Step 2, instruct the user to 'divide the basil in half', and refer to 'half the prepared basil' in Step 4 and the 'remaining prepared basil' in Step 6.
Issues
- medium / flavor: The succotash contains approximately 640g of vegetables (corn kernels, onions, tomatoes). To achieve a 1% salinity by weight, it needs about 6.4g of salt (roughly 1 teaspoon of dense kosher salt or 2 teaspoons of lighter kosher salt). The 1/2 teaspoon called for will leave the vegetables substantially underseasoned.
- low / clarity: Referring to 'two 0.25-ounce portions' of basil in the instructions is somewhat clinical and unnatural for a home cook.
Strengths
- Excellent division of preparation and active cooking tasks.
- Very clear and approachable instructions for cleaning and breaking down a whole Dungeness crab.
- Appealing, seasonal flavor profile that uses butter and herbs to tie the seafood and produce together.
