  • In step 5, change the pull temperature of the pork to 140°F.
  • Move the garlic prep instruction to step 5 so it is completed while the pork and vegetables finish roasting, leaving the 5-minute resting period strictly for cooking the sauce.

Issues

  • low / flavor: Pulling the pork tenderloin at 145°F will cause it to carry over to 150°F+ during the rest, resulting in slightly dry meat. Pulling at 140°F ensures it finishes beautifully within the optimal 140-145°F range.
  • low / timing: Instructing the cook to peel and mince garlic during the 5-minute resting period unnecessarily rushes the sauce-making, which itself takes 3-4 minutes. The garlic should be prepped during the longer 12-16 minute roasting time.
