Issues

  • medium / cookability: Step 5 instructs the cook to ensure the sausage registers 165°F. Because the sausage is cooked as bite-size crumbles in a sauce, it is practically impossible to accurately temp with a meat thermometer. Given that the crumbles brown for 4 minutes and simmer for another 8 to 10 minutes, they will easily reach a safe temperature without needing to be probed.

Strengths

  • Perfectly calculates 2% salinity for the pasta water (1/4 cup Diamond Crystal kosher salt for 2 quarts of water).
  • Excellent upfront prep step grouped neatly into a bulleted list, ensuring the cook is ready before turning on the stove.
