Tuscan Red Lentil & Zucchini Stew
This is a well-structured and practical one-pot recipe with excellent prep instructions and accurate timing. However, the seasoning is significantly too low for the large volume of lentils and vegetables, which will result in a bland stew.

- Increase the total kosher salt to at least 2 teaspoons.
- Add 1 teaspoon of kosher salt in step 4 with the broth and tomatoes to allow the lentils to absorb the seasoning as they cook.
- Use the remaining 1 teaspoon of kosher salt (or adjust to taste) in step 6.
Issues
- medium / flavor: The recipe calls for approximately 1.7 kg of ingredients (lentils, zucchini, tomatoes, onions, and low-sodium broth) but only uses 3/4 tsp of kosher salt. Even when accounting for the sodium in the parmesan and broth, targeting the standard 1% salinity by weight for vegetables and grains would require around 12 to 15 grams of added salt (at least 2.5 to 4 teaspoons depending on the brand of kosher salt). The current amount will leave the stew noticeably under-seasoned.
