Moroccan Lamb with Silky Eggplant Couscous
While the flavor profile and ingredient pairings are conceptually excellent, the recipe suffers from severe underseasoning across all main components and flawed cooking mechanics for the eggplant, which will likely burn as written.
Score: 5/10
Suggested fixes
- Increase total kosher salt to at least 3 teaspoons. Allocate 1 1/4 teaspoons to the lamb, 1 teaspoon to the eggplant mixture, 1/2 teaspoon to the couscous water, and keep 1/4 teaspoon in the yogurt sauce.
- Increase the olive oil used for the eggplant to 3 tablespoons, or instruct the cook to add 2 tablespoons of water and cover the skillet for the first few minutes to steam-tenderize the eggplant without burning.
- Simplify step 6 to say 'Divide the cooked couscous and eggplant mixture between two warm plates. Top with the rested 1 pound lamb loin chops...' instead of repeating raw ingredient transformations.
Issues
- high / flavor: The recipe is drastically underseasoned based on weight percentages. 1/2 teaspoon kosher salt is insufficient for 1 lb of lamb (target ~1.25% by weight, or roughly 1 to 1 1/4 tsp). 1/4 teaspoon kosher salt for 1.5 lbs of eggplant and tomatoes is virtually imperceptible (target 1%, or roughly 1 to 1.5 tsp). The total recipe salt needs to at least double.
- high / cookability: Cooking 1 pound of diced eggplant in just 1 1/2 tablespoons of olive oil over medium-high heat will cause burning. Eggplant is highly porous and will absorb that small amount of oil instantly, leaving the pan dry.
- low / clarity: Step 6 uses overly rigid, robotic phrasing to reiterate ingredient quantities, resulting in awkward instructions like 'couscous made from 5 ounces dry couscous and the eggplant mixture made from 1 medium eggplant and 8 ounces heirloom tomato'.
Strengths
- Excellent front-loaded preparation step that groups vegetable chopping and sauce making before active heat is required.
- Mathematically perfect ingredient tracking, accounting for every fraction of divided spices and oils.
- Balanced textural and temperature contrasts between the hot, spiced lamb and the cool mint-yogurt sauce.
