Chicken Adobo with Zucchini
This is a quick and accessible weeknight adobo with a nice addition of zucchini, but it suffers from a missing instruction for the garlic and is significantly underseasoned.
Score: 6/10
Suggested fixes
- Specify adding the chopped garlic to the soy-vinegar mixture in Step 1, or instruct the cook to sauté the garlic briefly after searing the chicken in Step 3 before adding the liquids.
- Change the 'reduced-sodium soy sauce' to regular soy sauce, or increase the kosher salt used on the chicken to 3/4 teaspoon to properly season the combined meat and zucchini.
Issues
- high / clarity: The 3 garlic cloves are chopped in Step 1 but never actually added to the dish. In an adobo, garlic is a primary flavor component and must be included in the cooking steps.
- medium / flavor: The dish is underseasoned. 1 lb of chicken and 1 lb of zucchini (approx. 900g combined) need about 9-11g of salt total. 3 tablespoons of reduced-sodium soy sauce (approx. 4.5g salt equivalent) plus 1/4 teaspoon of kosher salt only provides about half the necessary seasoning.
Strengths
- Incorporating zucchini makes this a well-rounded, one-pan (plus rice) meal.
- Cooking times and instructions for the jasmine rice are accurate and perfectly sequenced with the rest of the meal.
- The ingredient usage tracking is consistent and quantities match the list.
