A very solid and flavorful recipe with perfect ingredient math. The main areas for improvement are workflow (moving the relish prep to before grilling) and refining the 'agrodolce' so the honey incorporates properly into the raw ingredients.

  • Change the word 'centerpiece' to 'pork' in steps 6 and 7.
  • Move the preparation of the tomato relish to the beginning of the recipe so it can sit and marinate while the cook focuses on grilling.
  • Consider adding a tablespoon of olive oil to the relish to bind it, or suggest briefly warming the vinegar, honey, and raisins together in the microwave or on the stove before mixing with the tomatoes.
