Spanish Scallops with Tomato Rice
This is an elegant and well-timed recipe with accurate properties and a great flavor profile, but it falls short on seasoning. The total salt needs to be increased significantly to properly flavor the scallops and rice, and the lemon juice should be added off the heat to prevent dangerous sputtering.
Score: 7/10
Suggested fixes
- Increase the kosher salt on the scallops to 3/4 teaspoon in Step 1.
- Increase the kosher salt on the rice and tomatoes to 1/2 or 3/4 teaspoon in Step 4.
- Update the total kosher salt amount in the ingredient list to reflect these increases (1 1/4 to 1 1/2 teaspoons total).
- In Step 6, instruct the cook to lower the heat when adding the butter to baste the scallops, and stir in the lemon juice off the heat or reserve it to drizzle over the finished plates.
Issues
- high / flavor: The recipe is significantly underseasoned based on weight ratios. The 12 ounces of scallops should receive roughly 3/4 teaspoon of kosher salt to reach the 1.25% salinity starting point for boneless meat. The rice and tomatoes (approx. 433g) require around 3/4 teaspoon to reach a 1% salinity starting point, even considering the low-sodium stock. The current total of 3/4 teaspoon leaves both main components flat.
- medium / safety: Adding 1 tablespoon of lemon juice simultaneously with butter to a skillet of hot oil over medium-high heat will cause the hot fat to violently sputter. It is much safer to add the lemon juice off the heat or drizzle it over the scallops during plating.
Strengths
- Excellent descriptive language that paints an appealing picture of the final dish.
- Using a risotto-style technique for the rice creates a creamy, rich texture that pairs well with scallops.
- Well-structured prep list sets the cook up for success before active cooking begins.
- Calorie and cost estimates are very accurate.
