Yucatecan Achiote Chicken & Zucchini

A structurally sound and appealing grilling recipe that makes great use of active and passive time. However, it requires a significant increase in salt to properly season the meat and vegetables, as the current measurements will yield a very bland result despite the bold flavorings.

Suggested fixes

  • Increase the total kosher salt to at least 2 1/4 teaspoons in the ingredient list.
  • Allocate 1 teaspoon of kosher salt to the chicken marinade, 3/4 teaspoon to the zucchini and onions, and 1/2 teaspoon to the salsa.
  • Adjust the grilling instructions so the vegetables go on the grill during the chicken's final minutes of cooking, or clarify that the chicken will rest for about 8 minutes while the vegetables cook.

Issues

  • high / flavor: The recipe is significantly underseasoned. One teaspoon of kosher salt is insufficient for nearly 3 pounds of food. Using standard percentages, 1 lb of chicken requires about 1.25% salt (approx. 5.5g or 1 to 1.5 tsp depending on the brand), and 20 oz of zucchini and onion require about 1% salt (approx. 5.5g or 1 to 1.5 tsp). The 1/4 tsp salt for the vegetables and 1/2 tsp for the chicken marinade will leave the dish bland.
  • low / timing: Step 6 instructs to grill the vegetables for 6 to 8 minutes total 'while the chicken rests,' but Step 5 dictates only a 5-minute rest for the chicken. The vegetables should either be started during the last few minutes of the chicken's cooking time, or the chicken's rest time will simply extend, which should be noted.
