Moroccan Lemon Chicken & Zucchini

This is a well-structured and efficiently timed sheet-pan recipe with excellent formatting and workflow. However, it requires a significant increase in salt across all components to reach proper seasoning levels, and a bit more olive oil would make coating the ingredients much easier.

Suggested fixes

  • Increase the total kosher salt to 3 teaspoons: use 1 1/4 teaspoons for the chicken, 1 teaspoon for the zucchini, and 3/4 teaspoon for the couscous water.
  • Increase the extra-virgin olive oil to 3 or 4 tablespoons to create a looser, more spreadable marinade that easily coats the chicken and vegetables.

Issues

  • high / flavor: The recipe significantly underseasons the main components compared to target percentages by weight. For 1 lb of chicken, a 1.25% target requires ~5.7g of salt, but 3/4 tsp kosher salt yields only 2.2-3.6g depending on the brand. For 1 lb of zucchini, a 1% target is 4.5g, but 1/2 tsp yields 1.5-2.4g. For 6 oz couscous and 1.25 cups water (total ~470g), a 1% target is 4.7g, but 1/4 tsp yields less than 1.2g.
  • medium / cookability: Combining 2 tablespoons of olive oil with nearly 3 teaspoons of dry spices, plus minced garlic and lemon zest, will yield a thick paste rather than a fluid oil. Half of this mixture (about 1.5 tablespoons of paste) will be very difficult to toss evenly over an entire pound of raw zucchini half-moons.
